 13.50 oz Can of Full Fat Unsweetened Coconut Milk
  cup Granulated Sugar Substitute
 ½ tsp Vanilla Extract (optional)

Place the coconut milk and granulated sweetener in a sauté or skillet pan over high heat. Bring to a boil and then turn down the heat to medium-low (a simmer)─That's fun to say sssiiimmerrr~

S-S-S-Simmer, stirring occasionally for 20-25 minutes or until the liquid has reduced by about half.

Or, just change your mind, throw caution to the wind, and keep going until it turns into a luscious caramel and eat it by the spoonful. *~*

My 'milk' only took about 20-25 minutes to condense, but yours may or may not take  longer. Just watch it as it gets closer to the 5 minute mark. From my experience over the years, the larger the surface area of the pan, the faster the milk will condense. It should be slightly thick and gooey when it is finished. It will continue to thicken as it cools.

Now to use your imagination. The possibilities are endless. Cream for boba tea, Thai tea, cakes (like Dulce de leche) ice cream toppings, shaved ice. Ahh, so many recipes─ so little time.
