Keto Lemon Bars Recipe

Ingredients for crust
 2 cups Fine almond flour
 2 tbsp Coconut flour
 ½ cup Melted butter
 ¼ tsp Salt
 ½ cup Powdered sugar substitute (or to taste)
 ½ tsp Almond extract** optional
Ingredients for filling
 3 Large lemons juiced (or 1/2 cup)
 2 tbsp Lemon zest
 5 Large eggs
 1 Large egg yolk
 1 ½ tbsp Coconut flour
 ½ cup Powdered sugar substitute (monkfruit works wonders for this recipe or truvia)
 ¼ cup Softened butter (you can use coconut cream or vegan butter)

Pre-heat oven to 350° Line an 8x8 baking pan with parchment paper and set aside. A dab of butter under the parchment paper keeps that lil guy in his place. -_o


Next, mix together your almond flour, coconut flour, powdered sugar, melted butter, and almond extract. Mix well. It should be like sugar cookie dough in texture.

Unlike steak, well done batter is the best way to go. Keeps you from getting hunks of gross. <3


Press the crust into the pan until it reaches the desired thickness. I like more in the middle with a little less back─ sorry Sir Mixalot.


In a separate bowl mix your softened butter, lemon juice, and powdered sugar substitute. Once it is glossy and smooth, add your eggs, extra egg yolk, and mix completely. Mix in the coconut flour until combined.


Bake the crust for 15 minutes. As soon as it is finished, pour the filling mixture and place back in the oven. Bake for 20-25 minutes or until it is set.


Finish with powdered sugar and lemon zest. Voila~ Yummy, guilt-free lemon bars. <3
