Keto honey is super easy to make and tastes delicious!

 2 cups Warm Water Divided
 1 cup Keto Brown Sugar (Swerve, Sukron Gold, Lakanto, etc.)
 1 tsp Xanthan Gum
 1 ½ tbsp Honey Extract

After warming your 1 cup of water (set the other cup aside) add the xanthan gum and whisk until combined. Note, the water should be warm not boiling. If you burn your finger in it, testing the water it's too dang hot!

Combine your second cup of warm water with 'brown sugar' in a sauce pan over medium heat. As soon as your sugary concoction has come to a boil, pour in your water/xanthan gum mixture and whisk that puppy. Whisk it and shake your hips to the rhythm, maybe do a little Rumba with your Roomba.

Reduce your heat to low and simmer for 10 - 12 minutes or until it has thickened.

Remove from heat and stir in the honey extract. Let the mixture cool completely before putting it in a container or sealed jar. Let it cool in the fridge for at least an hour, but it will be thicker if you leave it overnight.

Your 'honey' can keep in the freezer for up to 6 months! Way longer than a frozen toe~ <3
