Delicious Apple Fritters in Less Than 30 Minutes!

 1 cup Almond Flour
 1 tbsp Coconut Flour
 1 ½ tsp Arrowroot Flour (or Corn Starch)
 1 tsp Xanthan Gum
 1 ½ tsp Ground Cinnamon (or to Taste)
 ¼ tsp Salt
 ¼ tsp Ground Clove
 2 tbsp Salted butter Softened (or Unsalted if You Prefer Less Salty or Oil)
 4 tbsp Finely Ground Sugar Substitute - Like Monkfruit or Allulose (Not Powdered Swerve! This Will Mess With the Texture of the Fritters.)
 1 Large Egg Room Temperature
 ½ Medium (or large) Apple Cut into Chunks About the Size of Chocolate Chips
 ½ tsp Vanilla Extract
 ¼ tsp Grated Fresh Ginger *optional
Ingredients For Icing
 2 tbsp Cream Cheese Softened
 3 tbsp Powdered Sugar Substitute
 1 tsp Vanilla Extract
 ½ tsp Lemon Zest *Optional
 ½ tsp Lemon Juice (or to taste) *Optional
 1 tbsp Heavy Cream or Coconut Cream
Optional Brown Sugar Topping
 2 tbsp Brown sugar substitute
 1 tsp Ground Cinnamon (or to taste)

Preheat oven to 325°F.

While the oven is heating up, whisk all of your dry ingredients except your sugar!

In a mixing bowl, or separate bowl cream together the butter, cream cheese, vanilla, and sugar substitute until the mixture is super fluffy and light. Like a soft, baby bunny. <3 Now add your egg and mix all ingredients until fully combined.

Stir in your apple chunks so that they are evenly spread throughout the batter. Every little cookie needs their lovely lady lumps~

Grease a large baking sheet and evenly spread out the batter, making them somewhat uniform in size. I like to use an ice cream scoop. :3

Sprinkle your sugar/cinnamon mixture over the top and then place them in the oven for 11-13 minutes. They should be lightly golden on top and around the edges.

They will be soft when they come out of the oven, so allow them to cool for 5 or so minutes before placing them on a wire rack. Let them cool enough that you can put icing on them and it won't melt.

Drizzle the icing on top and enjoy! Nommy nummy~
