Summer Time Zesty Orange Scone Recipe – keto and vegan

  cup Lupin Flour (can sub with coconut or almond flour, texture may vary)
 1 ½ tbsp Hemp Hearts
 1 ½ tsp Chia Seeds
 ½ tsp Baking Powder
 ¼ cup Unsweetened Apple Sauce
 ¼ tsp Orange Zest
  tsp Salt
 2 tbsp Pyure Confectioners Sugar (or finely Ground Granulated Sweetener. I like Golden Monk Fruit)
Optional Ingredients
  tsp Fresh Grated Ginger
 1 tbsp Keto Friendly Jam of Your Choice. I Found an Orange Pineapple Blend I love.
 1 tbsp A Sprinkle of Powdered Swerve to Top

Preheat oven to 375°

Combine lupin flour, hemp hearts, chia seeds, baking powder, and salt. Give it a good stir, don't leave any bumpy-lumpies. >:( Set aside.

In a separate bowl, combine apple sauce, sugar substitute, orange zest and *optional grated ginger. Dissolve sugar and fully combine ingredients. Squeeze a tiny squeeze of orange juice, mix it and you're good to go!

Now, it's time to make a batter party. Oh yeah! Drop the wet ingredients into the dry ingredients. Make club noises as you swish them all together - mm cha mm cha mm cha, wub wub wub

It should look like a firm paste, almost dough-like consistency.

Line a baking tray with parchment paper, or use a silicone mat. If you're using parchment paper, lightly butter or use an oil spray so it doesn't stick. Make sure you do this on the ring mold too if you're feeling fancy like me this morning. <3

I like using ice cream scoops because it's fun and clean. Scoop them into a ring mold, heart ring mold, or free style it into any shape your heart desires.

If you are shaping it by hand make sure they are all even thickness so they will bake at the same time. You can either make 1-2 scones for yourself, or make 4 scones to share. Your call, I'm making a big one all for me.

Bake at 375° for 6-7 minutes. You want to add a little crispy bit on the top and edges. It makes a neat mouth feel.
Lower the temperature to 350° and bake for an additional 10-12 minutes. If you press your finger on the top and it still feels a little gummy in the middle, try cooking it for an additional 3-5 minutes. Keep an eye on it so it doesn't burn!

If you are making 4 scones, bake at 375° for 4-5 minutes and then an additional 8-10. Again, check on them within the last 5 minutes and make sure they are not getting too dark. It should be a light golden color on top, and a deeper amber on the bottom.

Take them out and let them cool for 5-10 minutes. Put on any topping you'd like and sprinkle with powdered swerve. Think happy thoughts with a light tappy-tap. The sugar will fall in all the right places with a little love.
